Penne with Peanut Pesto

A unique garlicky-peanutty pesto, reminiscent of Asia.

Ingredients

  • 3 garlic cloves, minced
  • 1/2 cup unsalted roasted peanuts
  • 1 tsp sugar
  • 1/4 cup soy sauce
  • 1 tbsp fresh lime juice
  • 1/2 tsp Asian chili paste
  • 1/4 cup creamy peanut butter
  • 2 tbsp toasted sesame oil
  • 1 lb penne
  • 1/4 cup chopped fresh cilantro, for garnish
  • 2 tbsp chopped green onions, for garnish

Preparation

Step 1

1. In a food processor, combine the garlic, peanuts, and sugar and process to a paste. Add the soy sauce, lime juice, and chili paste and process until well blended. Add the peanut butter and sesame oil and process until smooth. Transfer to a small bowl and set aside.

2. In a large pot of boiling salted water, cook the penne over medium-high heat, stirring occasionally, until al dente, about 10 minutes. Drain well, reserving 1/3 cup of the pasta water. Transfer the pasta to a large serving bowl. Add the reserved pasta water to the pesto, stirring to make a smooth sauce. Add the sauce and toss gently to combine. Garnish with cilantro and green onions and serve immediately.
