Ingredients
- 3 tbsp. Chianti red wine vinegar
- 2 tsp sugar
- 1 tbsp pine nuts
- 2 tbsp extra virgin olive oil
- 1/4 tsp crushed red papper
- 1 cup chopped onions
- 1 tbsp non pareil capers
- 2 tbsp spanish manzanilla olives sliced
- 1/4 cup golden raisins
- 1 can (28 oz) italian cut roma tomatoes
- 1/4 tsp salt
Preparation
Step 1
1. Combine red wine vengar and sugar in small bowl; set aside.
2. Heat olive oil in large pan on medium-high, until oil faintly smokes. Add pine nuts, crushed red pepper and onions/ cook 2 min until oinions are translucent. Add capers, olives and raisins; cook 1-2 min.
3. Add tomatoes, vinegar-sugar mixture, and salt. Bring to a simmer 5 min.
