This is a recipe from our old neighbor Theresa Prouty from when we lived in Hickory Hills, IL. She was from Mexico and was a wonderful cook. The kids and I loved to sit in her kitchen and watch her cook. This is Alex's favorite soup and one of the recipes she shared with me. It is also knows as "Almondigas".

Ingredients

  • 1 pound ground beef
  • rice
  • 1 egg
  • cumin
  • salt
  • pepper
  • garlic powder
  • carrots, diced
  • potatoes, diced
  • 1 can tomato sauce

Preparation

Step 1

To make the meatballs:
Mix together the ground beef, rice, egg, cumin, salt, pepper and garlic powder. Shape into small round balls and fry in a large skillet until brown. Drain.

To make the soup:
Cook the potatoes and carrots in a large stock pot of water for about 20 minutes until tender. Do NOT drain the water. Add the cooked meatballs to the water with the potatoes and carrots. Add the can of tomato sauce. You can add some additional rice to the soup, if desired. Add an additional 1 teaspoon salt to soup. Simmer over medium heat for an additional 20 minutes. Check for seasoning before serving.
