Ingredients

  • 4 medium skinless, boneless chicken-breast halves
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • 1/2 cup white wine
  • 2 tablespoon lemon juice
  • 2 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh sage
  • 1 tablespoon butter
  • 1/3 teaspoon Salt and pepper

Step 1

Using a meat mallet, pound chicken breasts to an even 3/4-inch thickness. Then add 1/4 teaspoon salt and 1/4 teaspoon pepper to each side.

Add oil to 12-inch skillet and Preheat to medium-high. Add chicken breasts and cook 6 to 7 minutes per side or until browned, turning over once. Remove breasts from pan and set aside to keep warm. Drain skillet of oil.

In same skillet, add chicken broth and white wine. Cook on medium-high for 3 minutes to reduce. Stir in lemon juice, sage, and parsley. Remove skillet from heat, and plate chicken. Stir in butter until butter is melted. Finally, pour sauce lightly over each plated breast.
