New Potato Salad

Ingredients

  • 3 lbs. new potatoes, unpeeled
  • 1/3 c. finely chopped purple onion
  • 1/3 c. olive oil
  • 1/3 c. red wine vinegar
  • 1/4 c. stone-ground mustard
  • 2 tsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1/2 lb. thick-sliced bacon, cooked and crumbled
  • 1 c. chopped fresh parsely

Preparation

Step 1

Cook potatoes in boiling water to cover 15 minutes or until tender. Drain and cool slightly. Cut into 1/4" slices. Combine potatoes and onion in a large bowl; set aside.

Combine olive oil, vinegar, and next 4 ingredients; mix well with a wire whisk.

Pour dressing over potato mixture; toss gently. Cover and chill.

Add bacon and parsely just before serving; toss.
