Lima Bean Casserole

Ingredients

  • Oven Temperature 350 degrees.
  • 1 cup dried lima beans
  • 1 tsp. salt
  • 1/2 cup chopped onion
  • 1/2 cup diced celery
  • 2 Tbsp. chopped green pepper
  • 2 tbsp. chopped green chiles
  • 2 cups stewed tomatoes
  • 1/2 tsp. chili powder

Preparation

Step 1

Cover beans with water; soak overnight. Drain, cover with fresh water and simmer until tender, about 1 1/2 to 2 hours. Add remaining ingredients. Pour into a casserole and bake 40 minutes. Amount: 4-6 servings.
