Oven Fried Zucchini Chips

  • 1/2 c Panko breadcrumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp Cajun/Creole spice blend
  • 1/2 c grated Parmesan cheese
  • 1/4 tsp freshly ground black pepper
  • 2 zucchini
  • 1/2 c milk
  • 1 tsp sea salt

Preheat the oven to 425 degrees Fahrenheit, and then, in a medium-sized mixing bowl, combine the Panko breadcrumbs, the garlic powder, the Cajun/Creole spice blend, half of the Parmesan cheese, and the black pepper.

Place an oven-safe baking wire rack onto a baking sheet, and then spray the baking rack with a nonstick cooking spray. Slice the zucchini into round, quarter-inch slices, pour the milk into a small mixing bowl, and dip each zucchini round into the milk. Shake off any excess milk, and drag each zucchini round through the dry ingredients.

Place the zucchini rounds onto the baking rack, making sure to leave at least a quarter-inch between the rounds. Sprinkle the sea salt and the remaining Parmesan cheese evenly over the zucchini rounds. Bake the zucchini for 30 minutes, or until the rounds are golden brown. Serve them immediately.
