Bavarian Chef's Apple Cabbage

Large family-style portioned Bavarian side dish rich in flavor that should be used sparingly. This recipe comes from The Bavarian Chef in Culpeper, VA.

Ingredients
- 1 head of red cabbage, julienned
- 1 small yellow onion diced into small brunoise
- 1 cup diced apples, preferably granny smith
- 1 cup red cooking wine
- 1/2 cup red wine vinegar
- 3/4 cup white sugar
- 2 cloves
- 1 bay leaf
- salt and pepper to taste
- 1/4 cup cornstarch
- 1/2 cup water
Preparation
Step 1
Combine all ingredients (except cornstarch and water) into a large pot. Cook on medium heat until cabbage is tender, about one hour. Combine cornstarch with one cup water and slowly stir into pot until cabbage thickens. Remove from heat and serve.
