- Calamari, tubes and tentacles

- (2") White Tortilla Chip Pieces

- Powdered Ranch Dressing Mix
- 1 1/4 cups
- Low-fat Buttermilk
- 1/2 cup
- Plus 2 Tablespoons Whole Wheat Flour
- 1/4 tsp
- Freshly Ground Black Pepper
Preparation
Step 1
Preheat your oven to 400 degrees F and use cooking spray to coat 2 large baking sheets. Pat the calamari with a paper towel to dry it. Slice the tubes crosswise into 1/2-inch thick rings and set aside alongside the tentacles. Mix together the bread crumbs, tortilla chips and ranch dressing in a food processor and process until the ingredients are finely ground. Place this mixture into a bowl.
Take out another bowl and use a whisk to mix together the buttermilk, 2 tablespoons flour and black pepper. Pour the remaining flour in a large freezable bag. Transfer the calamari to the bag with the flour and shake until evenly coated. Dip the flour-coated calamari into the buttermilk mixture and then the bread crumb mixture. Place the calamari in a single layer on the baking sheets and spray with cooking spray. Bake for around 30 minutes, which is when the calamari should be tender and golden brown.
