Ingredients
- What You’ll Need:
- 1 bell pepper
- 2 stalks of celery
- 1/2 cup chopped tomatoes
- 1 portobello mushroom
- 1 avocado
- 2 green onion
- 1 cup of beans or grains
- 1/4 cup of mixed nuts and seeds
- 2 large handfuls of mixed greens
- Dressing:
- 2-3 tbsp. extra virgin olive oil
- 1/2 tsp. grainy dijon mustard
- 1 tsp. balsamic vinegar
- 1/2 tsp. turmeric
- Sea salt & black pepper to taste
- Chop up all the veggies and fruit into bite size pieces and divide into two mason jars, in this order:
- Add dressing
- Add hard veggies and fruit (carrots, peppers, celery)
- Add beans, legumes, and hard grains
- Add soft veggies and fruit (avocado, tomato, mushroom)
- Add greens!
- Add nuts and seeds

Preparation
Step 1
Chop up all the veggies and fruit into bite size pieces and divide into two mason jars, in this order:
Add dressing
Add hard veggies and fruit (carrots, peppers, celery)
Add beans, legumes, and hard grains
Add soft veggies and fruit (avocado, tomato, mushroom)
Add greens!
