SALMON****Cedar-Planked Salmon with Maple-Mustard Glaze

04/07/15 - This was very good. Andria and Kaleb came for dinner, I had a piece that was almost a pound and the whole thing went (on Andria, mostly, although Dan did his piece justice and Kaleb even tried a couple of bites). If making this just for Dan and I, a much smaller piece would be in order.

Ingredients

  • 12 oz. salmon fillet
  • 2 tablespoons maple syrup
  • 1 tablespoon grainy Dijon mustard
  • pinch of chili flakes
  • salt & pepper, to taste
  • lemon halves, to serve

Preparation

Step 1

Soak one 12- x 7-inch (30 x 18 cm) untreated cedar plank in water for 30 minutes or for up to 24 hours; place salmon on top.

In small bowl, whisk together maple syrup, mustard, chilies, salt and pepper; brush half over salmon.

Place plank on grill over medium-high heat; close lid and cook, brushing once with remaining maple mixture, until fish flakes easily when tested, 20 to 25 minutes.

At the same time, grill a couple of lemon halves for serving.

If you can't do this outside, bake it on planks in a 425°F oven for about 12 minutes.
