Ingredients
- 2 1/2 cups water
- 1 cup uncooked long grain rice
- 1/2 cup chopped dried pineapple
- 2 tsp butter
- 1/2 tsp grated lime rind
- 1/4 tsp salt
- 1/4 cup chopped fresh cilantro
- 1 TBSP chopped green onions
- 2 1/2 TBSP fresh lime juice
Preparation
Step 1
Bring water to a boil in a medium saucepan. Add rice and next 4 ingrediates. Cover, reduce heat and simmer 20 minutes or until liquid is absorbed. Remove from heat. Stir in cilantro, onion, and juice.
