Rum cocktail great after a day on the water! Tart, sweet, and cool like a slice of key lime pie

Ingredients

• 1.5 ounces Calico Jack Key Lime Rum or similar
• 1 ounce coconut cream or pina colada mix
• 2 ounces pineapple juice
• wedge of lime for garnish
• graham cracker crumbs for rim
• ice cubes
• crushed ice
• collins or highboy glass
• cocktail shaker

Preparation

Step 1

Use the wedge of lime to moisten the rim of the glass and rim with graham cracker. Garnish rim with lime wedge.

Combine ice cubes, rum, coconut cream, and pineapple juice in shaker. Shake until hand is uncomfortable from the cold and frost forms on the outside.

Fill glass with crushed ice. Strain cocktail into glass.
