Wild Alaskan King Salmon with Cherry Salsa

Grilled wild Alaska king salmon fillets get a sweet spicy co-star with this seasonal salsa.

Ingredients

  • 2 c sweet cherries
  • 1 jalapeno, minced
  • 1 med shallot, minced
  • 1/4 c fresh basil, chopped
  • 2 t balsamic vinegar
  • Sea salt & freshly ground pepper, to taste
  • 4 (6oz) Alaska king salmon fillets

Preparation

Step 1

1. Preheat grill.
2. Pit & chop cherries; combine w/jalapeno, shallot, basil, & vinegar.
3. Taste & adjust seasoning w/salt & pepper.
4. Refrigerate for @ least 1 hr before serving.
5. Grill fillets 10 minutes per inch.
6. Serve w/salsa.
