Ingredients

  • 2 small tomatoes, chopped
  • 2/3 c crumbled feta cheese
  • 1/3 c chopped red onion
  • 2 T minced fresh parsley
  • 2 T EVOO
  • 1 T red wine vinegar
  • 1 t minced fresh oregano or 1/4 t dried oregano
  • 1/8 t salt
  • 1/8 t pepper
  • 2 medium ripe avocados, halved,pitted & peeled

Step 1

In small bowl, combine first 9 ingredients. Spoon into avocado halves. Serve immediately.

Options: jalapeño, onion, lime juice; blue cheese or Gorgonzola instead of feta.
