Ingredients
- 2 small tomatoes, chopped
- 2/3 c crumbled feta cheese
- 1/3 c chopped red onion
- 2 T minced fresh parsley
- 2 T EVOO
- 1 T red wine vinegar
- 1 t minced fresh oregano or 1/4 t dried oregano
- 1/8 t salt
- 1/8 t pepper
- 2 medium ripe avocados, halved,pitted & peeled

Step 1
In small bowl, combine first 9 ingredients. Spoon into avocado halves. Serve immediately.
Options: jalapeño, onion, lime juice; blue cheese or Gorgonzola instead of feta.
