Strawberry Party Meringue Cake

Ingredients

  • 1/4 c shortening
  • 1/2 c sugar
  • 1/2 tsp vanilla
  • 2 egg yolks
  • 1 c sifted cake flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 c milk
  • 2 egg whites
  • 1/2 c sugar
  • 1/4 c slivered blanched almonds
  • Fresh strawberries halved (or frozen berries)

Preparation

Step 1

Cream shortening; gradually add 1/2 cup sugar and vanilla; cream until fluffy. Beat in egg yolks. Sift together cake flour, baking powder and salt. Add alternately with milk to creamed mixture, beating after each addition. Pour into 2 lined 8 x 1 1/2 round pans.

Beat egg whites until frothy; gradually add 1/2 cup sugar. Beat until stiff peaks form. Spread evenly over cake batter. Sprinkle with almonds.

Bake 350F for 30 to 35 minutes. Cool in pans 10 minutes. Remove and cool thoroughly. Spread berres between layers. Serve with whip cream and extra, sweetened berries.
