Ingredients

  • 8 cups old fashioned oats
  • 1 cup brown sugar
  • 2 cups nuts, slivered almonds and chopped cashews, pecans, or walnuts
  • 1 cup coconut
  • 1 tbsp. cinnamon
  • 2 tsp. salt
  • 1 cup wheat germ
  • 1 cup coconut oil or vegetable oil
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 2 tbsp. vanilla

Step 1

Preheat oven to 325 degrees. Mix dry ingredients in large bowl. Add oil, honey, and sugar in saucepan. Bring to a simmer, stir to dissolve sugar. Turn off heat. Add vanilla. Pour wet mix over dry ingredients. Stir to coat. Spread granola on large greased baking sheet (or better yet, put down parchment paper, it helps to keep it from burning). Baking time will fluctuate depending on the size of your baking sheet. Bake 15 minutes, then stir. Bake another 15 minutes or until golden brown. When cool, add dried fruit. The possibilities are endless - cranberries, blueberries, cherries, raisins. Store in sealed container.

You can really substitute anything in this recipe. You can also add more/different nuts and seeds.
