Ingredients
- 1/4 cup oil
- 1 cup onions, chopped
- 1 6 oz. can tomato paste
- 1 tablespoon salt
- 1 tablespoon sugar
- 1/2 teaspoon fresh basil leaves
- 1 clove garlic
- Italian plum tomatoes, 2lb 3 oz. can-cut up
- 1 teaspoon oregano
- 1/4 teaspoon pepper
- 2 ricotta cheese, 15. oz. cartons
- 8 lbs mozzarella cheese, shredded
- 1/3 cup Parmesan
- 2 eggs
- 1 tablespoon parsley
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 zitti noodles, may use mostacelli- large package
Preparation
Step 1
Saute onion and garlic 10 minutes. Add paste, tomatoes 1 1/2 c water and seasoning. Simmer covered 1 hour.
Cook noodles
Put 1/2 sauce on bottom of pan.
Blend last 7 ingredients
Put 1/2 noodles on top of sauce. Then cheese. Repeat.
Add Parmesan after sauce layer on top.
