Peanut Brittle

  • veg spray
  • 1.5 cups sugar
  • 1/2 cup light corn syrup
  • 3/4 cup water
  • salt
  • 2 cups salted peanuts
  • 1 tsp vanilla
  • 1/2 tsp baking soda

Preparation

Step 1

Prepare pan: spray 9x13 inch baking pan with veg spray, line with parchment, and spray again.
Bring sugar, corn syrup, water, and a pinch of salt to a boil, stirring until dissolved. Using a damp pastry brush, brush away sugar crystals from side of pan. Cook, swirling occasionally, until it reaches 238 on a candy thermometer. Stir in peanuts, cook about 6 minutes more, stirring often, until light amber. Stir in 1 tsp vanilla and 1/2 tsp baking soda. Mixture will foam up. Immediately pour into pan and spread evenly. Let cool.
