Lemony Almond-Feta Green Beans

Ingredients

  • 1 lb. fresh green beans, trimmed
  • 2 T butter
  • 1 small onion, halved & sliced
  • 3 garlic cloves, sliced
  • 1/2 c sliced almonds
  • 1 t grated lemon peel
  • 3 T lemon juice
  • 1/4 t salt
  • 1/8 t pepper
  • 1/2 c crumbled feta cheese

Preparation

Step 1

In Lg pan bring 4 c water to boil. Add green beans; cook uncovered 4-5 minutes until beans turn bright green. Remove beans & Immeditely drop into ice water. Drain & pat dry.

In Lg skillet heat butter over medium heat. Add onion; cook & stir 6-8 minutes until tender. Add garlic; cook 1 minute longer.

Add green beans & almonds; cook & stir 3-4 minutes until beans are crisp tender. Sprinkle with lemon peel, lemon juice, salt and pepper; toss to combine. Top with cheese
