Sriracha-Glazed Chicken and Onions

Just discovered Sriracha sauce recently (hot chile sauce - find in the Chinese section at grocery store). Love the hot, spicy kick it gives to food. So .. decided to search for recipes and found this one. It was perfect!!! I love the mix of spices. The hot, sweet sauce coats the chicken and onions. Try it served with brown rice and snow peas or broccoli -- or see my recipe for Asian Broccoli Slaw. MMMMmmmmm. :)

Ingredients
- 3 T. hoisin sauce
- 1 T. ketchup
- 1-1/4 t. Sriracha (kick it up if you like hot!!)
- 1-1/2 T. canola oil
- 1-1/2 c. sliced onion
- 1 T. fresh ginger, minced
- 1 T. garlic, minced
- 3/4 t. curry powder
- 1 pound boneless chicken breast, cut into 1" thick slices
Preparation
Step 1
Combine hoisin, ketchup and Sriracha in small bowl.
Heat oil in large nonstick skillet over medium-high heat. Add onion; saute 5 minutes or until tender.
Add chicken, ginger, garlic, curry powder. Saute 6 minutes, or until chicken is done.
Stir in hoisin mixture - cook another minute, tossing to coat.
