Southern Corn Chowder

Ingredients

  • 8 ears of corn
  • 4 Tablespoons butter
  • 1 large diced green pepper
  • 2 large diced potaoes
  • 1/4 cup minced parsley
  • 2-3 Tablespoons flour
  • 4 cups milk
  • 16 ounces heavy cream
  • 1/2 pound cooked and crumbled bacon
  • or breakfast sausage

Preparation

Step 1

Scrape kernels from corncobs, extracting the milk. Saute onions and pepper on medium heat, stirring frequently, do not brown. Add corn kernels and cook for a few minutes. Add potato and parsley, cook 2-3 minutes. Sprinkle flour over mixture, and stir until it begins to thicken. Reduce heat to medium-low, add milk and cream, bring to a slow boil. Reduce heat and simmer 30-45 minutes. Stir in meat.
