Ingredients

  • 1 tbsp olive oil
  • 1 lb. ground chicken or turkey
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1/4 cup hoisin sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp freshly grated ginger
  • 1 tsp Sriracha, or more, to taste
  • 1 (8 oz.) can water chestnuts, drained and diced
  • 2 green onions, thinly sliced
  • Kosher salt and freshly ground black pepper, to taste
  • 1 head butter or iceberg lettuce

Preparation

Step 1

Heat olive opil in a saucepan over med. high heat. Add ground chicken or turkey and cook until browned, about 3 -5 min., making sure to crumble the chicken as it cooks; drain excess fat.
Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1 - 2 min. Stir in chestnuts and green onions until tender about 1 - 2 min; season with salt and pepper.
To serve, spoon several tbsp of the chicken mixture and some hoisin-peanut sauce into center of lettuce leaf.
Hoisin sauce:
Warm 1 cup hoisin sauce, 1 tbsp. creamy peanut butter and 1 tbsp. water over med heat, bring to a boil and remove heat. Spoon hoisin sauce and meat mixture in center of lettuce leaf. Bon Appetit!!!
