Lemon poppy seed cookies

  • 1/2 cup flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup sugar
  • 2 egg yolks
  • 2 tbsp poppy seeds
  • 1 tbsp veg oil
  • 1 tsp grated lemon zest
  • 1/2 tsp vanilla

Step 1

Preheat oven to 350. In a medium bowl, combine flour, salt and baking soda. In a small bowl, mix together sugar, egg yolks, poppy seeds, oil, zest, and vanilla. Stir egg mix into flour mix until combined. Dough will be dry.
Drop by teaspoonfulls onto a parchment lined baking sheet, 2 inches apart. Bake 10-14 minutes, until golden brown. Transfer to wire racks to cool.
