Ingredients
- 1 large or XL egg - cold, right from fridge
- juice of 1/2 a lemon or lime (2-3 tsp) *(can sub in fave vinegar if wanted)
- generous pinch of sea salt
- 1 C EXTRA LIGHT TASTING olive oil *(other olive oil is too strong
Preparation
Step 1
*add egg to tall jar/container, add juice/vinegar, and salt
*add any optional flavorings (listed below)
*pour in the 1 C of olive oil. Yep. just pour it in.
*Let everything sit for a few seconds - long enough for the egg to settle at the bottom under the oil.
*Insert IMMERSION blender, making sure it's touching the bottom of the container. Turn on and let it blend a full 20-30 seconds without moving it. Then slowly start moving blender around, and up and down, making sure all of the oil gets well mixed in.
*Store in refrigerator in an airtight container for up to 2 weeks.
**OPTIONAL ADD IN'S:
1 T Dijon mustard - 1 clove minced garlic - horseradish, etc..
fresh herbs such as thyme, rosemary, oregano...
1/4 tsp cracked black pepper, crushed chili peppers...
