Ingredients

  • 10-12 Small Campari Tomatoes
  • 3-4 TBS Olive Oil
  • 4 Servings of Fettuccine Noodles
  • 2 Avocados
  • 2 Garlic Cloves
  • 1/2 TSP Salt
  • 2 TBS Lemon Juice
  • 1/4 Cup Pine Nuts
  • Grated Parmesan Cheese
  • Salt and Pepper
  • NEXT TIME I WANT TO TRY ADDING CHICKEN OR SHRIMP

Preparation

Step 1

Preheat oven to 300°F
Wash and quarter the tomatoes.
Place on a baking sheet lined with parchment paper.
Drizzle with 1-2 TBS of Olive Oil. Bake for an hour.
10 Minutes before the tomatoes are finished boil water and cook pasta.
While pasta is boiling, add 2 TBS Olive Oil, Avocados, Garlic, Salt and Lemon Juice in food processor. Pulse until the ingredients are smooth and creamy.
Strain the pasta and combine with the sauce in a large bowl.
Add the roasted tomatoes, sprinkle with Parmesan cheese and Pine Nuts.
