Ingredients

  • 30 oz pumpkin
  • 3/4 cup butter
  • 1 1/2 cups brown sugar
  • 3 eggs
  • 1 cup white flour
  • 2 cups whole wheat flour
  • 4 tsp cinnamon
  • 1 tsp nutmeg
  • 4 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 scoops protein powder
  • 3 1/2 cups rolled oats
  • 1/4 cup wheat germ
  • 1/4 cup flax seed
  • 1 cup chocolate chips

Directions

In a mixing bowl, combine flours, cinnamon, baking soda, and salt. Set aside.

Blend pumpkins and butter.
Add brown sugar and eggs and mix until combined. Add flours, cinnamon, baking soda, and salt and blend.

Add oats, wheat germ, flax, and chocolate chips. Mix until combined.
Fill muffin tins and bake for 15-20 minutes at 350 degrees. Make 24 muffins.
