Roasted Pork Loin with Garlic, Dijon and Herbs

This easy, succulent roast pork is rubbed with a fragrant mix of fresh herbs, garlic, and Dijon mustard. Serve it with cauliflower mash and sauteed vegetables to make a well-balanced meal.

Step 1
1. Preheat the oven to 350 F.
2. Place the pork loin on a rack in a shallow roasting pan.
3. In a small bowl, combine the lemon juice, mustard, olive oil, garlic, herbs, and salt, and season with pepper. Pierce the meat in several places with a sharp knife, and then rub the garlic mixture all over the pork.
4. Roast, uncovered, until a thermometer registers 150 F to 155F for medium, 25 to 30 minutes per pound. Remove the pan from the oven and let the pork rest 10 to 15 minutes.
5. Transfer the roast to a cutting board and cut into 12 3/4" slices. Arrange the slices on a serving platter and spoon the pan juices over the top.
