Scalloped Apples and Pork Chops

Ingredients
- 2 1/2 cups sliced apples
- 4 small sweet potatoes, pared & sliced
- 1/3 cup raisins
- 1/3 cup brown sugar
- Dash nutmeg
- 3 tbsp currant jelly
- 3 tbsp prepared mustard
- 4 pork chops, cut 3/4" thick
- Salt and pepper

Step 1
Preheat oven to 350 degrees. Place half the apples at either end of a greased 8x11 baking dish. In the center, place the sweet potato slices. Scatter the raisins over all and sprinkle with brown sugar and nutmeg. Combine the jelly and mustard, mixing until smooth. Trim fat from pork chops and coat both sides with the jelly mixture. Place chops on sweet potatoes and sprinkle with salt and pepper. Cover and bake 1 hr 40 mins or until chops are tender.
