Ingredients
- 1/2 jar roasted red pepper
- 1/2 pkg of herbed goat cheese
- 5 pcs of chicken
- 1/2 pkg mushrooms
- 2 c chicken stock
Preparation
Step 1
1. Salt both sides of the chicken.
2. **TECHNIQUE**
On the fatest part of the chicken using a paring knife cut a deep hole into the top - once you have the hole stick your finger in there to widen slightly and prepare for stuffing.
3. In a separate bowl mix together the goat cheese and chopped roasted red pepper.
4. Stuff the chicken and in a hot pan sear both sides until about half cooked and nice and brown on both sides.
5. Take the chicken out of the pan and place in oven safe dish - bake at 400 for 15 to 20 mins each side.
**SAUCE**
In the pan that the chicken was cooking deg-laze with a bit of butter - once the butter has melted add the flour - now you can add your mushrooms and chicken stock and let it thicken.
