Chicken Tandoori

Ingredients
- 3/4 cup plain yogurt
- 1 small red onion, finely chopped
- 2 Tbsp fresh ginger
- 2 Tbsp white wine vinegar (rice vinegar works too)
- 1 Tbsp dijon mustard
- 1 garlic clove, minced
- 2 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp cinnamon
- 1/8 tsp cayenne
- 8 (1/4 lb) chicken cutlets
Preparation
Step 1
1. Combine all the ingredients except the chicken in a large zip close plastic bag. Add the cutlets. Squeeze out the air and seal the bag. Coat the cutlets. Refridgerate, turning the bag occasionally for at least 2 hours.
2. Preheat the broiler and spray the boiler pan with nonstick spray
3. Remove the cutlets from the marinate; discard the marinade. Place the cutlets in the broiler pan and broil 5 inches from the heat, turning once, until cooked through, about 8 minutes.
