Porcupine Balls

This was my Aunt Betty and Aunt Ethels recipe

Ingredients

  • 1 lb ground beef
  • 1/4 cup uncooked rice
  • 1 slightly beaten egg
  • 1 T fresh parsley chopped well
  • 2 T chopped onion
  • 1/2 t salt ( substitute)
  • 1 can tomoatoe soup
  • 1/2 cup water
  • 1 T worcester sauce

Preparation

Step 1

Combine 1st seven items plus 1/2 cup soup
roll balls ( not too big will take too long for the rice to cook making a tough meat ball)

Place in skillet
add the remaining ingredients
bring to a boil. reduce heat, cover and simmer about 40 minutes

Serve over noodles or rice using the sauce from the pan as well.
