Asparagus and Prosciutto Hash

Ingredients
- 2 T Vegetable Oil
- 1 lbs New Potatoes, diced
- 1/8 t each Salt & Pepper
- 1 Red Onion, chopped
- 1 lbs Asparagus, trimmed and cut into 1-inch pieces
- 1/4 t each Salt & Pepper
- 1 1/2 oz Prosciutto, chopped (4 slices)
- 4 Eggs
- Hot Sauce

Step 1
In a large skillet, heat 2 Tbsp. vegetable oil over medium-low heat. Add 1 pound new potatoes, diced, and season with 1/8 tsp. each salt and pepper. Cook, covered, until browned, 10 minutes; then stir and cook, covered until tender, 15 minutes more. Add 1 red onion, chopped, and cooke over medium heat, stirring until soft, 5 minutes. Add 1 pound asparagus, trimmed and cut into 1-inch pieces; season with 1/4 tsp. each salt and pepper, and cook, covered, until almost tender, 3 minutes. Stir in 1 1/2 oz chopped prosciutto (4 slices).
With a spoon, make four nests in the hash and crack 1 large egg into each. Cook, covered, until whites are set, 5 minutes. Serve with hot sauce.
