Crunchy Baked Cod

Ingredients
- 3/4 c panko or other bread crumbs
- 2 T chopped fresh parsley or other herb
- 2 T EVOO
- 1/2 t freshly ground black pepper
- 4 cod fillets (3-4oz each)
- Salt to taste (optional)
- 2 T mustard
Preparation
Step 1
1. Heat oven to 450F.
2. In small bowl, combine bread crumbs, parsley, oil & pepper.
3. Sprinkle fillets w/salt.
4. Evenly spread tops of fillets w/mustard.
5. Dip top side of fish in bread crumbs; pressing gently to adhere.
6. Arrange on baking sheet.
7. Place in oven; bake until fish is cooked & opaque throughout, about 10 minutes.
8. Slip briefly under to brown crumbs if desired.
