Chicken Salad

Ingredients

  • 4 cups cooked chicken---rotisserie is great--discard the skin and bones.
  • 1/2 c. diced celery
  • 1/2 c. diced onion
  • 1/2 c. diced apple
  • 1/2 c. shredded sharp cheddar---fat free is great in this.
  • 1 c. mayo--low fat or fat free
  • 1 Tbsp. rice wine vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. pepper.

Preparation

Step 1

Combine all ingredients and refrigerate for at least an hour for the flavors to meld together.
