  • 3 pounds red potatoes
  • 1 large onion, cut into 1 inch pieces
  • 1/4 cup olive oil
  • 2 teaspoons Kosher salt
  • 1 teaspoon dried crushed rosemary
  • 1/2 teaspoon ground black pepper

Step 1

Preheat oven to 400 degrees.

Line a rimmed baking sheet with heavy-duty aluminum foil.

In a large bowl, combine potatoes, onion, oil, salt, rosemary, and pepper; toss gently to coat. Spread in a single layer on prepared baking sheet. Bake for 40-45 minutes, stirring occasionally, or until potatoes are browned and crisp. Serve immediately.
