Double Lemon Bars

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup powdered sugar
  • 3/4 cup (1 1/2 sticks)butter, cut into pieces, at room temp
  • 4 eggs
  • 1 1/2 cups granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 Tbsp plus 1 tsp all purpose flour
  • 1 Tbsp grated lemon peel
  • Powdered sugar, for garnish

Preparation

Step 1

1. Preheat oven to 350 degrees. Combine 1 1/2 cups flour and 1/2 cup powdered sugar in processor. Add butter and cut in, using on/off turns, until mixture resembles coarse meal. Press into bottom of 9x13x2" baking dish. Bake until crust is golden, about 20 min. Remove from oven. Maintain oven temperature.

2. Beat eggs, 1 1/2 cups sugar, lemon juice, 1 Tbsp plus 1 tsp flour and lemon peel in med. bowl to blend. Pour into crust. Bake until mixture is set, about 20 min. Cool.

3. Cut into 24 bars. (Can be prepared one day ahead. Refrigerate in airtight container). Sift powdered sugar over top before serving.
