Thai Chicken with Peanut Sauce

Ingredients

  • 4 skinless, boneless chicken breasts
  • Marinade
  • 1 small onion finely chopped
  • 1 garlic clove, crushed
  • 1 " piece fresh ginger root
  • 2 tbsp dark soy sauce
  • 2 tsp chilli powder
  • 1 tsp ground coriander seeds
  • 2 tsp dark brown sugar
  • 1 tbsp lemon or lime juice
  • 1 tbsp vegetable oil
  • Spicy Peanut Sauce
  • 300 ml coconut milk
  • 4 tbsp crunchy peanut butter
  • 1 tbsp fish sauce
  • 1 tsp lemon or lime juice
  • salt and pepper

Preparation

Step 1

1. Cut chicken into thin strips.
2. Mix marinade and add chicken strips. Cover and put in the refrigerator to marinate for 2 hours or overnight.
3. Remove chicken from marinade and thread onto skewers.
4. Grill 8-10 minutes, brushing with marinade occasionally.
5. Meanwhile, to make the spicy peanut sauce, mix the coconut milk with the peanut butter, fish sauce and lemon juice in a pan. Bring to a boil and cook for 3 minutes. Season with salt and pepper to taste.
