Sweet Potato and Apple Stuffing

Ingredients
- 2 lbs sweet potatoes, scrubbed
- 2 tbs butter plus 1/4 cup if baking outside of meat
- 1 1/2 cups chopped onions
- 1/2 cup celery
- 1/3 tsp salt
- 1/4 tsp pepper
- 2 cups diced, peeled apples
- 1/2 apple cider
- 1/4 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 2 cups unseasoned bread crumbs
- 1/4 cup chicken broth, if needed

Preparation
Step 1
1. Cover potatoes with water in a large pot, bring to a boil, then reduce the heat and simmer, covered, until tender, about 20-25 min, until the potatoes can be pierced through with a sharp knife. Drain. When cool enough to handle, remove the skins and mash the potatoes in a large bowl.
2. Heat 2 tbs butter in a large skillet over med-high heat until the foam subsides. Add the onions, celery, salt and pepper, cook, stirring, until vegies are softened. about 5 min. Add the apples, apple cider and spices, cook, stiring, until the apples are tender but still hold their shape, 3-4 min.
3 Stir mixture into the sweet potatoes, along with breadcrumbs. Adjust the seasonings and moisten if needed with chicken broth.
4. Use as a stuffing or put into 9x9 inch baking dish and dot with remaining 1/4 cup butter. Bake at 350 degrees for 20 min or until golden brown.
