Smashed Lean Cauliflower

  • 1 head cauliflower (about 2 lbs)
  • 3-4 cloves garlic smashed
  • 2 T coarse sea salt
  • 1 c hot water from pot after cooking cauliflower
  • 6 T Better Than Bouillon Chicken Base



Step 1

Remove core and leaves from cauliflower Chop cauliflower into small florets
(slightly larger than the size of a walnut) Put cauliflower in a pot and add enough water to cover Smash 3-4 cloves of garlic and remove papery covering Put into the pot along with sea salt Turn heat on high and cook until very tender (15-20 mins) Remove 1 c hot water and stir in Better Than Bouillon Drain remaining water and return pot to low heat Add in Water/Better Than Bouillon mixture Use an immersion blender to puree until smooth If the mixture is too "soupy" allow it to continue to cook off Before serving swirl in 1/2 c nonfat sour cream
