Ingredients
- 7 to 9 pound bone in HEB Prime 1 or HEB Natural Angus Beef Ribeye Roast, iwht fat trimmed to 1/8 inch thick
- OR
- 5 to 6 pound boneless HEB Prime 1 or HEB Natural Angus Beef Ribeye Roast
- Rub
- 1/4 cup ground black pepper
- 2 tbs. white pepper
- 2 tbs. salt
- 1 1/2 tsp. thyme
- 1 1 /2 tsp. garlic powder
- 1 tsp. onion powder
Preparation
Step 1
Combine rub ingredients and coat entire roast surface evenly. Wrap roast tightly in plastic wrap and refrigerate 12 to 24 hours.
Heat oven to 300. Cook roast in the center of the oven. Place roast fat side up in shallow roasting pan. Do not cover or add water.
Roast 22 to 26 minutes per pound. Remove from the oven when meat thermometer inserted in center of thickest part of roast, not touching bone or fat, reads 135 for medium rare. Let stand 15minutes before carving into 1/2 to 3/4 in thick slices. Serve with Creamy Horseradish Sauce
Creamy Horseradish Sauce
1 pkg. 8oz. cream cheese
1/2 cup horseradish
1/4 cup mayonnaise
1/4 cup Dijon Mustard
Mix and refrigerate until ready to serve.
