Shrimp Saganaki

I found this recipe on Pinterest and made some adjustments to fit our taste. The recipe as written is for two main dish portions.

Ingredients

  • 12 large shrimp
  • 3 tablespoons olive oil
  • 1/2 small red onion, diced
  • 1/2 red or yellow pepper, diced
  • 1/2 cup kalamata olives, diced or sliced
  • 2 medium ripe tomatoes, diced (about 1 cup or so)
  • 1/2 cup feta cheese, coarsely crumbled, plus a little more for the top
  • 1 cup marinara sauce (I used Trader Joe's tomato and basil marinara)
  • The amount of each ingredient is dependent on your individual taste. The original recipe also called for a tablespoon of chopped fresh oregano. 1 teaspoon dried oregano and a half teaspoon of crushed red pepper. Also, a splash of Ouzo may be added.

Preparation

Step 1

In a medium skillet, heat your olive oil over medium-high heat and then add your onions, peppers, tomatoes and olives. Saute until the onions are soft and the tomatoes are starting to break down, about 5-7 minutes. Add the marinara and simmer for 5-10 minutes until you end up with a nice thick sauce.

Stir in part of the feta cheese. Taste and adjust seasoning with salt (I haven't ever had to use any). Arrange shrimp on top. Place under the broiler for about 3 minutes. Sprinkle additional feta cheese on top. Place back under the broiler for an additional 2 minutes, or until the shrimp is cooked through.

This dish can be served over pasta or just served on it's own. I serve it with whole grain angel hair pasta and steamed asparagus.
