Ingredients

  • 1 lb lean ground beef or pork, crumbled
  • 1 package taco seasoning
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen corn, thawed
  • 1 can (10 oz) enchilada sauce
  • 1 1/2 cups coarsely crushed multi-grain or tortilla chips
  • 1 cup shredded cheddar
  • Shredded lettuce
  • Chopped tomato
  • Light dairy sour cream

Preparation

Step 1

1. In large skillet over medium-high heat, cook meat until no longer pink, about 4"; drain nay excess fat.
2. Add taco seasoning; cook according to package directions. Place cooked meat in 8" square baking dish that has been lightly coated w/ cooking spray.
3. Top w/ black beans and corn. Drizzle enchilada sauce over top. Cover w/ tortilla chips and cheese. Bake in 375 degree oven until cheese melts, about 5 minutes.
4. Serve and garnish w/ sour cream, lettuce and tomatoes.
