Super-Healthy Blueberry Mini-Muffins

Ingredients

  • 1 1/3 cups whole wheat flour
  • 3/4 cup white selfrising flour
  • 2 teas baking powder
  • 1/2 teas baking soda
  • 1/2 teas ground cinnamon
  • 2 ripe bananas
  • 2 eggs
  • 2/3 cup brown sugar
  • 6 tblsp polyunsaturated margarine
  • 1 teas pure vanilla essence
  • 1 cup ripe blueberries
  • mini-muffin pan, lined with mini-muffin liners

Preparation

Step 1

1. Preheat the oven to 375. Sift together the flours, baking powder, baking soda, and cinnamon in a large bowl.

2. Peel the bananas and put them in a bowl. Mash them with a fork or puree them with a handheld blender. Add the eggs, sugar, margarine, and vanilla essence and blend again. Pour into the flour mix, and mix until just combined.

3. Gently fold in the blueberries. Spoon into the mini muffin liners and bake in the preheated oven for 25 minutes, or until risen and golden brown. Turn out onto a wire rack and let cool. Store in an airtight container for up to 3 days, or freeze.
