Grilled Steaks with Greek Relish

Ingredients

  • 2 plum tomatoes, seeded and chopped
  • 1/2 c chopped red onion
  • 1/3 c pitted Greek olives
  • 2 Tbsp minced fresh cilantro
  • 2 Tbsp lemon juice, divided
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 beef ribeye steak (1/4 lb)
  • 1/2 c crumbled feta cheese

Preparation

Step 1

For relish:

In a small bowl, combine tomatoes, onion, olives, cilantro, 1 Tbsp lemon juice, oil and garlic.

Drizzle remaining lemon juice over steak. Grill, covered, over medium heat 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145º; medium, 160º; well-done 170º)

Let stand for 5 minutes; cut in half. Serve with relish and cheese.
