These beans are "crocked" and have a smoky flavor. One dish meal served with Texas Toast or garlic bread. Top with fresh cilantro, a dollop of sour cream, and/or grated cheese.

Ingredients

  • 1 lb ground beef
  • 1 lb dried pinto beans, soaked per pkg,
  • rinsed and drained
  • 2 dried ancho chili peppers
  • 1 can (14.5 oz) Fire Roasted Diced
  • Tomatoes
  • 1 Poblano Pepper,chopped
  • 1 Red Onion, chopped
  • 1 Red Bell Pepper,chopped
  • 2 Tbs Garlic, chopped
  • 2 Tbs Chipolte Chili Peppers in Adobo
  • Sauce, chopped
  • 1 Tbs ground Cumin
  • 2.5 Tbs Chili Powder
  • 1/2 Tbs crushed Red Pepper
  • 1/4 cup Cider Vinegar
  • 1/4 cup brown sugar
  • 1 Tbs salt
  • 1/2 cup catsup
  • 1/4 cup Worcestershire
  • 1 cup strong black brewed coffee

Preparation

Step 1

Soak ancho chili peppers in water X 15 minutes. You may need to weight them down to keep them covered in the water. Drain and chop.
Combine all ingredients in slow cooker and cook on hi X 8-10 hrs. Depending on your cooker, it may take a shorter or longer period of time for the beans to soften. Start checking every hour after 6 hrs unless you have prepared beans in your cooker previously.
