Quinoa Salad

Ingredients

  • Another variation:
  • Quinoa
  • 1/4 cup diced avocado
  • 1/2 sliced heirloom cherry tomatoes
  • 3 tbs fresh cilantro
  • 3/4 tsp EVOO
  • salt and pepper to taste if desired.
  • Heirloom tomatoes
  • Buffalo mozzarella cheese in bite size pieces
  • Chopped basil
  • Chopped Mango
  • Balsamic vinegar

Preparation

Step 1

1. Cook Quinoa as directed on pkg, let cool

2. Stir in avocado, cilantro and tomatoes. Pour EVOO into salad and serve, room temp or cold.
