Ingredients
- Another variation:
- Quinoa
- 1/4 cup diced avocado
- 1/2 sliced heirloom cherry tomatoes
- 3 tbs fresh cilantro
- 3/4 tsp EVOO
- salt and pepper to taste if desired.
- Heirloom tomatoes
- Buffalo mozzarella cheese in bite size pieces
- Chopped basil
- Chopped Mango
- Balsamic vinegar
Preparation
Step 1
1. Cook Quinoa as directed on pkg, let cool
2. Stir in avocado, cilantro and tomatoes. Pour EVOO into salad and serve, room temp or cold.
