Aunt Nettie's Gingerbread

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 well-beaten eggs
  • 1 cup dark ribbon cane molasses
  • 2 teaspoons ground ginger
  • 1 cup boiling water
  • 1 teaspoon baking soda
  • 2 1/4 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves

Preparation

Step 1

Cream butter and sugar. Add eggs. Mix flour and spices together. Add flour mixture to butter mixture alternating with molasses. Mix thoroughly. Dissolve baking soda in boiling water and add to mixture. The batter will be very thin.

Pour into greased 9 X 13 inch pan and bake at 375°F for 25 minutes, or until done.

Serving Suggestion: When cool, dust with powdered sugar or top with whipped cream and cherries.
