Chicken Shrimp Creole

Ingredients

  • 2 bacon strips
  • 1/2 lb boneless skinless chicken breasts, sliced or cubed
  • 1 medium onion, chpped
  • 1 small green pepper, chopped
  • 1 celery rib, chopped
  • 1 garlic clove, minced
  • 1 can (14 1/2 oz) diced tomatoes, undrained
  • 1 bay leaf
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp Worchestershire sauce
  • 1/4 tsp hot pepper sauce
  • 1 lb medium uncooked shrimp, peeled and deveined
  • 3 C cooke4d brown rice

Preparation

Step 1

- Cook bacon until crisp; drain and reserve 1 T drippings; crumble bacon and set aside
- Saute chicken, onion, green pepper, celery for 5-6 min in reserved bacon grease until chicken is no longer pink; add garlic and cook 1 min more
- Stir in tomatoes, spices and sauces; bring to boil; cover and simmer for 20 min; add shrimp and bacon; return to boil and simmer 5 min till shrimp are pink; discard bay leaf
- Serve with rice
