Okra and Tomatoes Casserole

  • 1/4 cup sliced green onions
  • 2 T oil or butter
  • 1 T flour
  • salt and pepper, to taste
  • 1/2 cup milk
  • 1/4 cup grated cheese
  • 8 oz. okra, cut into 1/2 inch chunks and steamed 5 minutes (until brightest green)
  • 1 3/4 cups chopped tomatoes
  • 3/4 cup soft bread crumbs
  • 1 T melted butter



Step 1

Saute green onions in 2 T oil or butter. Stir flour into golden onions. Add salt and pepper and milk and cook until bubbly. Stir grated cheese into sauce. Fold okra and tomatoes into sauce and pour into a casserole dish. Mix bread crumbs and melted butter for 5 minutes over medium heat. Sprinkle over top of casserole and bake for 30 minutes at 350 degrees, or until heated through.
